PLs Cuban Sandwich

As promised, today I am going to feature my version of the cuban sandwich.  Remember to make extras of the Simple Pork Chops because you'll want to have enough to try this out--you may even convince your mind that you are somewhere on South Beach or sitting in Havana!


Equipment:
Toaster Oven
Sharp knife

Ingredients:
Leftover or Freshly-made Pork chops, sliced in half


Thin Sliced Ham
Gouda, Havarti, or Munster type cheese
Italian baguette (this is a lighter baguette, less chewy and less dense than a French baguette)
Mayonnaise
Mustard (I use Gulden's Brown)
Kosher Dill Pickles


Instructions:
1. Wash Your Hands.
2. Slice your baguette into thirds, cut in half and toast lightly.


(Buy an extra baguette and freeze it pre-sliced for future garlic bread or other sandwiches)


3. Carefully slice the pork chops in half, approx 1/8" in width.


4. Begin your assembly:
--Mayo and mustard, both sides


--pickles, one side



--ham, one side


--pork slices on top of ham


5. Briefly toast again until cheese is softened.


6. Combine both sides of the sandwich.
7. Dig in! Crunchy, warm, and so satisfying!

Basic Egg Salad With Or Without The Yolk

As we revisit some of the basic cooking skills from earlier this year, I thought adding a few lunch items to the blog could be of value.  Eggs are simply an awesome food group with so many degrees of variation and use, and as stated previously, they are cheap.

Having hard-boiled eggs in the fridge are great for snacking, taking to class, adding protein to your diet, and for making egg salad sandwiches.  And you can do this several different ways.  I am going to touch upon the 'Classic Egg Salad Sandwich', but I have also listed a variation for those of you who hate egg yolks or who prefer a smoother texture:  'Simple Egg White Salad Sandwich'.

Note: 
If you are going to take the time to hard-boil eggs, go ahead and make a few extra.  These will last in the fridge for a few extra days long after the egg salad has vanished.


Equipment:
Large 5-qt sauce pan

Ingredients:
6 hard-boiled eggs
1/3 cup of mayo (use Miracle Whip if you like a sweeter version)
1-2 Tbls of celery, finely diced (some recipes use 1 Tbls of sweet relish or pickles)
1-2 Tbls of shallot or onion, finely diced
Pinch of salt
Fresh pepper
Spritz of lemon

For a lighter version without yolks:
6 hard-boiled egg whites
1/3 cup of mayo
1-2 Tbls of red onion
Pinch of salt and pepper
Pinch of dried dill (optional)
Pinch of dry mustard (optional)

Instructions:
1. Wash your hands.
2. Lay eggs into the sauce pan in a single layer and cover with 1-2 inches of water.


3. Bring water and eggs to a boil.  Reduce heat to LOW and cover for 30 seconds.



4. Remove pan from heat and let stand for 15 minutes.
5. Transfer eggs to an ice bath for 5 minutes.


6. Easily peel eggs and chop into a bowl.  (Remove yolks prior to chopping if using the second version)



7. Add finely diced celery or pickles or relish (if using), onion, and mayo.




8. Add your spices and lemon.  Fold mixture together gently.
9. Heap a sturdy amount onto sourdough, wheat, toast, or rye.
10.  Add any condiments, i.e. lettuce or tomato, and enjoy.

Sometimes I skip all the extras and just enjoy a pure egg salad sandwich without the onion, celery or additional flavors--just as good--especially if you haven't been to the grocery store in a while and your pantry is devoid of everything else.

Sweet Potato Fries with Lime Mayo Dipping Sauce

Great games coming up this weekend: Alabama vs Texas A & M.  Notre Dame vs Purdue.  I could go on and on.  Probably your school is having a party even if they are playing in the SEC or Big10, but whatever, you do, I know you don't want to slaving over the stovetop preparing food.



Make it simple this weekend:  Try the Marinated Flank Steak or Bandilicious Chicken Marinade.  Make your own salad or stop by Homemade Pizza for one of their seasonal salads.  And throw these in the oven.  Then...step away.  Enjoy the game!

Found this recipe in one of Epicurious magazines--delicious.  Approx cost: $3-4.

Equipment:
Large Baking Sheet
Aluminum Foil
Mixing bowl
Grater with a fine tooth side

Ingredients:
2-3 large sweet potatoes, peeled and sliced into wedges
1-2 Tbls of vegetable oil (do not add excessive oil--potatoes won't crisp)
Salt & Pepper

Dipping Sauce:
1/3 cup mayonnaise
1/4 tsp lime zest
1/8 tsp cayenne
1-2 tsp of lime juice


Instructions:
1. Wash your hands.
2. Preheat oven to 450F degrees.
3. Cover baking sheet in foil and spray with PAM


4. Toss the sweet potato wedges with vegetable oil on the baking sheet and spread out on sheet




5. Salt & Pepper potato wedges.


6. Bake in oven for 15-20 minutes.  Turn wedges once, and finish baking 15 minutes longer.



7. Combine mayo thru lime juice in a bowl.




8. Potato wedges should be golden and crisp.  Get your platter out and serve with dipping sauce.


9. Awesome.
10. Enjoy the compliments.
