How Do I Make Those Mushrooms?


Mushrooms are one of those things you learn to love! As a kid,  I hated them until a teacher sauteed them one day during a home economics class with butter, thyme, oregano, salt and pepper.  There was no turning back after that.


Make sure they are fresh and all the dirt has been removed.  Do your best to slice them evenly to ensure consistent cooking.  I tend to use baby portabellas most because they work well as a simple addition to a meat sauce or by themselves over pasta, on a burger, or on an open-faced chicken hoagie with mushrooms and broiled cheese.


How Do I Make Those Mushrooms

Equipment:
10-12" Skillet

Ingredients:
1-2 tsp of Butter
1-2 Tbls of Olive Oil
1-2 tsp of thyme or 1 Tablespoon of fresh thyme, removed from stems (optional)
1-2 tsp of oregano or 1 Tbls of fresh oregano, chopped (optional)
1-2 cloves of garlic, chopped and minced (optional)
Salt & Pepper, to taste
Spritz of lemon juice

Instructions:
1.   Prep your skillet with olive oil and butter on MED to HIGH heat.
2.   Add the mushrooms.
3.   Let them sit un-touched, un-shaken, un-stirred.  That way they will carmelize and brown nicely.
4.   Reduce to MED heat.
5.   Once browned, add your garlic, thyme, oregano.





6.   Salt & Pepper
7.   Finish off with a touch of lemon.


 Simple as that.
