White Chocolate Red Velvet Crinkle Cookies

I have to admit these are the easiest cookies I have ever made in under 30 minutes from start to finish--seriously--and they are delicious!  All credit goes to a great food blogger 'Baking With Blondie' who consistently turns out interesting meals, sides and desserts--I have never been disappointed with her recipes.


This is the perfect cookie for any college student with limited equipment.  I made this recipe with a mixer, but if the butter is softened appropriately, you don't need one!

Equipment:
Medium mixing bowl
Small mixing bowl
Baking sheet
Parchment Paper
Spatula

Ingredients:
1 box Red Velvet Cake Mix (only the dry ingredients-I used the only brand available: Duncan Hines)
2 eggs
6 Tbls butter, softened
1 cup powdered sugar
1 cup white chocolate chips



Instructions:
1. Wash your hands.
2. Preheat the oven to 375F degrees and prep your baking sheet with parchment paper.
3. Cream the butter and eggs.


4. Add the cake mix.


5. This will be a sticky and moist batter.


6. Stir in your white chocolate chips.
7. Roll into 1" balls and throw into the powdered sugar.


8. Space them approx. 2" apart on the baking sheet.


9. Bake for 8-10 minutes--I take them out a smidge early for a nice chewy center.
