Sure Thing Strawberry Shortcake

Are you ready for strawberry season? Celebrate any fruit with this fool-proof, no-skill-proof shortcake recipe! Making this dough is a cinch--10 minutes max. A touch of sugar is added making this a sweet biscuit that combined with fruit and whipping cream is irresistable! 


Quite possibly, you could change the base recipe to a more savory biscuit, i.e. add cheddar and jalapeno in place of sugar. Or, goat cheese and chives. This could get interesting with all the possibilities! See how simple this recipe is for yourself!

Sure Thing Strawberry Shortcake

Equipment:
Mixing bowl
Baking sheet
Parchment paper
Sieve or sifter (to combine dry ingredients, or simply, use a fork or whisk)


Ingredients:


A. Biscuits:
2 cups all-purpose flour
1 Tbls sugar
1/2 tsp salt
2 tsps baking powder
10 Tbls cold butter, diced
2/3 cup buttermilk, chilled


B. Strawberries:
1 lb fresh strawberries, hulled & cut
2 Tbls sugar
1/2 lemon juice
1-2 Tbls mint or basil, finely chopped


Redi Whip or Homemade Whipped Cream
Cinnamon or Cinnamon sugar

Instructions:
1. Wash your hands. 
2. Preheat oven to 375F degrees.
3. Prep your baking sheet with parchment paper.
4. Sift flour, sugar, salt, and baking powder together.


5. Add diced butter to dry ingredients and mash between fingers until you have a coarse meal.


6. Gradually add buttermilk and mix with a fork until a large clump of dough forms.




7. Divide dough into 6 rounds and bake for 20' minutes until golden brown. Sprinkle some cinnamon sugar on top if you have it.



8. Combine strawberries, sugar or simple syrup, juice and mint or basil in a mixing bowl.




9. Allow biscuits to cool slightly before cutting in half and loading them up with strawberries and cream!
